Directions for cupcakes:
Bake for 18 minutes or until a toothpick comes out clean.

PISTACHIO FRUIT DIP
Ingredients:
1 container of Cool Whip
1 box of JELLO Instant Pistachio Pudding Mix
Optional: Green food coloring
Directions:
1. Place Cool Whip into a bowl. Add contents of Pistachio Pudding Mix and mix well.
2. Optional: Add a couple of drops of food coloring to brighten the shade of green.
3. Serve with the fruit of your choice, and enjoy!

Make-Ahead Sausage, Egg, and Cheese Breakfast Muffins
Here's a delicious breakfast recipe that is so versatile! These Make-Ahead Sausage, Egg, and Cheese Breakfast Muffins are delicious when you eat them right from the oven, perfect when you have a crowd to feed (holiday brunches, kids' sleepovers, etc.), and are easy to freeze and warm up for school days or any busy morning.
It's nice to enjoy a hot breakfast, even on those days when you're in a rush, and this recipe makes it easy. For vegetarians, you can substitute veggie sausage or even skip the sausage.
Enjoy!
4 tablespoons butter, melted
1 teaspoon salt
1 teaspoon pepper
8 eggs
1 ½ cups shredded cheddar cheese
½ pound sausage, cooked and crumbled
Directions:
1. Preheat oven to 400˚.
2. In a large bowl combine the hash browns, butter, salt and pepper.
3. Spray a muffin tin with cooking spray. Fill the cups about ¾ of the way full with the hash browns. Press with your fingers to mold the hash browns to the cups all the way to the top. Try to make the sides the same thickness all the way around for even cooking. Make sure there are hash browns on the bottom of the cup.
4. Bake 20-25 minutes, or until they are starting to brown. Let cool slightly.
5. Reduce oven to 350˚.
6. Take half of the shredded cheese and sprinkle in the bottom of the cups. Repeat with half of the sausage crumble.
7. Whisk the eggs together and fill the cups until almost full.
8. Top with the second half of cheese and sausage.
9. Bake until eggs are set, 20-25 minutes.
10. To freeze: Let cool for two hours, then place muffins in a Ziploc gallon bag until you're ready to enjoy. Microwave for a few minutes before serving for breakfast.

Blue Velvet Cupcakes -- Recipe + Baking Kit Giveaway from Dawn Ultra -- Simplify Your Summer!

In our house, my husband is the "cook," but it's usually myself and the kids who do the baking. When we got a recipe for blue velvet cupcakes and a baking kit from Dawn, we couldn't wait to dive in.
The recipe wasn't anything too difficult, but it used the whole container of blue food coloring. You can see what the cake batter looked like as I started to mix it and how blue our cupcakes came out!
I said these were "Smurf" blue or "Blue's Clues" blue (my kid's favorite show when they were little), or may-be "Frozen." Actually these would be great with the white frosting and some red star sprinkles or July 4th decorations for Independence Day! You could brainstorm some ideas for other colors too.
Anyway, I really had a mess once I got them in the oven, and I was a little worried about the blue food coloring. I used my Dawn Ultra though, and everything washed up as good as new. I also like that I literally used a drop to clean up everything (saving money). Dawn Ultra's also great for cleaning up the countertop, sink, and stove too. I had everything clean and put away before my first batch of cupcakes were out of the oven.
The cupcakes were delicious by the way. Definitely give them a try, especially if you have kids. They'll think they're a lot of fun with the bright blue color!
